Vegetables: Part of Your Complete Breakfast!

I have nothing against vegetables, but for some reason they don’t end up on my plate often enough. Many days I realize (after supper) that my vegetable intake has been deplorably low.  I know how important they are to a well-balanced diet—you know, packed with vitamins, minerals, fiber, and complex carbohydrates. The challenge is getting enough of them on a daily basis.

Instead of adding vegetables as an afterthought in your supper, why not start the day with them? My husband and I have found that it’s incredibly natural and tasty to include vegetables in our breakfast. In fact, when you start thinking about how to use vegetables and find out which ones you like for breakfast, you’ll be amazed at the variety that they add to this important meal.

Here are just a few vegetables (and related cousins) that are easy to eat for breakfast. I’ve included lots of links to tasty recipes and methods of preparation:

Breakfast Vegetable Ideas

Potatoes

  • Slice them thin and fry in coconut oil until crispy.
  • Cut into small cubes and bake in a 375 oven until soft. Then add to egg casseroles or serve with ketchup or salsa.

Avocados

  • Cut into slices or cubes and use to fill an omelet
  • Make into guacamole by mashing with salsa, mayonnaise, and lime juice, then serve with breakfast burritos or gallo pinto.

Healthy Breakfast with lots of Vegetables!

Tomatoes

  • Make open-faced sandwiches with whole wheat bread, cheese, and sliced tomato. Heat under the broiler for a few minutes until the cheese melts.
  • Chop up and add to a brunch quiche

Greens

Garlic

  • Press/mince and add to omelets or breakfast casseroles
  • Roast it first and then serve with potatoes

Onions

  • Chop and then saute in bacon grease or home-rendered lard and then add to an egg-based breakfast like omelets or casseroles
  • Slice and saute, then serve hot with sausages

Serving a healthy breakfast with vegetables!

Mushrooms

  • Use fresh mushrooms in omelets or a breakfast strata
  • Blend into hollandaise sauce

Bell Peppers

  • Make stuffed peppers with your favorite omelet ingredients
  • Slice into rings, place in a hot oiled skillet, and fry an egg in the middle of each
