Tangy Summer Salad with Citrus Vinaigrette

Hello again! Stuck in a meal rut or just had one too many big meals with friends and family? Don’t get me wrong, summer barbeques are both tons of fun and quite delicious. But if you’re anything like me, you go back for one too many servings of whatever your vice is (your aunt’s potato salad, perhaps?). How does a fresh, crisp, summer salad sound? Here’s a recipe that would make a great pairing for a simple piece of grilled chicken or wonderful on it’s own on those hot nights when you don’t want anything to do with a stove, barbeque, or oven.

Tangy Summer Salad with Citrus Vinaigrette

Hands on time: 10 minutes Serves 4 as a main dish, 6 as a side
Salad ingredients
2 heads Romaine lettuce, washed
1 avocado
1/2 of a medium red onion
1 cup fresh blueberries
1 cup fresh pineapple
Dressing
1/4 cup fresh squeezed orange juice
1/4 cup apple cider vinegar
Fresh ground black pepper, to taste (I like a lot!)
Instructions
Wash all your produce. Chop the lettuce and set it aside. Chop the pineapple, red onion, and avocado and combine with blueberries in a bowl. Pour half the dressing over the “toppings” and let the flavors mingle for 15-30 minutes (as long as you an wait!). Portion out lettuce to each plate and top with a heaping spoon full of dressed toppings. Pour on more dressing if desired as well as more black pepper to taste. Serve alone or with a piece of grilled chicken for protein.
