How to make traditional Italian Waffle cookies: Pizelle Recipe

I recently found a Pizelle maker at a thrift store – and we’ve all been enjoying the results! Great for an afternoon snack or when friends show up and you’re hanging out in the kitchen. I modified the recipe to make it mildly healthier 🙂 It’s still considered a treat!

Note from Jami: If you’re like me you may be wondering just what a Pizelle is…I had to google it! So here it is: Pizelle are traditional Italian waffle cookies….yum!

Pizelle Recipe

I throw all ingredients into my huge blender – you can half the recipe for smaller families.

This will serve a crowd of about 10.

I also make up a big batch, make a few for kids in the afternoon and then stick the rest in the fridge and have the batter handy any time! It’s tempting to have it sitting around – I guarantee it won’t sick around for long!
(And when you are making them, they’re eaten faster than you can produce!)

This batter is also good for waffles, and I even made some crepes with it.

Ingredients:

7 Eggs
1 1/4 c. sugar
1 c. melted butter or coconut oil
3 c. flour (I mix a few different flours with good results)
1 c. almond meal
1 c. coconut flour/meal (you can find it cheaper at Indian grocery stores)
1 T baking powder

1/2 t salt

1 T vanilla

1 t almond extract
Grated lemon zest of one lemon
2 c. milk

Blend it. (You can also mix by hand with a whisk and wooden spoon, but I find the blender faster and more convenient).

Pour in pizelle or waffle maker or on a hot skillet. If pizelles, hang on your oven handle to cool and crisp!
