My Weekly Meal Plan & Baking Day: Week #1
I have a fun new feature that I’ll be starting here on the blog. Each week I share over on Instagram about my meal plans, what I’m making, and most excitedly my batch baking days. And each time I share, I get about 120 requests to share my recipes and I never have them set up in a way to easily share them.
So now, before my weekly meal prep, I am going to start sharing my weekly meal plan (plus a super easy way for you to create meal plans out of my meals through Build a Menu if you want).
My Weekly Meal Plan: Week #1
I feel a little silly titling this “week #1” since it’s neither at the beginning of the year nor at the beginning of a month. But I need a good way to keep track of these meal plans, so welcome to week #1!
I am a big fan of SIMPLE meal plans. I’ve done the gigantic meal plans where I plan out each specific meal every single day (including snacks) and it just gets too overwhelming and hard to keep up on. I have good intentions about it but it all just falls apart in the end.
So now, I loosely plan out breakfast and lunch (as you will see) but I do plan a dinner for each night that often gets switched to a different night…but at least I have the ingredients for it right??
Breakfast: I like to keep breakfast simple but filling! We don’t do any packaged cereal around here because most cereals are filled with junk and the actual good nourishing ones are way too expensive. I sometimes make my own granola that the kids eat as cereal which is always a huge favorite with them…stay tuned in a future meal plan for these!
This week for breakfast we will be alternating between eggs with homemade toast, oatmeal, and then some special pancakes at the end of the week.
Lunch: I don’t plan out lunch. I like to make sure I have certain things on hand (peanut butter, sandwich bread, salad items, etc) but the actual lunches don’t get planner out per se.
This week our lunches will be: veggies, fruit, and cheese trays, peanut butter & jelly, and smoothies for the kids. Salads, smoothies, and salmon with cauliflower rice for Jason and I.
Baking Day Agenda:
I want to note here: I don’t always get all of my baking day to-do’s done. My baking days are usually about 3-4 hours one day a week. I try to start this right after breakfast and wrap up before lunch. Some baking days go terrific and I end up adding in a few things to it. Other times it goes horribly and I get 3 things done. So my baking days go with the flow 😉 Here’s what I plan on getting done on Tuesday:
- Sandwich loaf in my bread machine – here’s the recipe I use
- Blueberry Muffins
- Tortillas
- Rolls (for soup)
- Chocolate Zucchini Amaranth Muffins
- Pumpkin Buckwheat Corn Muffins
- Cinnamon Streusel Coffee Cake
Dinners:
- Tuesday: Sausage Lentil Soup (crockpot)
- Wednesday: Date night out
- Thursday: Shrimp Pasta Dish with roasted brussel sprouts
- Friday: Chicken Burritos
- Saturday: Chicken florentine with zucchini noodles
- Sunday: Left over chicken florentine
- Monday: Tomato chicken Bisque
