TTM #69: Simple Breakfast Ideas with Jami

I’ve always struggled with breakfast. I am not a morning person and getting everyone fed in the morning can be tough. Especially when my kids were super little, it felt like a big job to get breakfast made.

So I’m always looking on the hunt for healthy and nourishing breakfasts that are simple.

We all know how important breakfast is. We’ve all heard that breakfast is the most important meal of the day and that a nourishing start to your day is SO important (especially for those little brains going off to a full day of school)!

Growing up, my breakfast consisted of pop tarts and sugary cereal. Looking back, no wonder I was already starving by the time I got to school. We burn off all that sugar so fast and are left with nothing nutritious (and dealing with a sugar crash).

But spending hours in my kitchen each morning doesn’t sound very appealing either. So over the past few years, I’ve become a master of fast but healthy breakfasts.

so let’s talk about good breakfast options:

  • Good source of protein
  • HEALTHY FATS! (i.e. Coconut oil, grass fed butter, avocado)
  • Veggies and/or probiotics when you ca fit them in!

What we don’t want to do is load up on sugar or simple carbs that will burn off too quickly and leave us with a sugar crash and isn’t nourishing those little brains. So a glass of orange juice and a white flour white sugar junk muffin or sugary cereal is not the best thing for a nourishing breakfast. So here are a few of my favs:

  • Spelt pancake baked topped with grass fed butter, organic frozen blueberries, and 100% pure maple syrup.Takes 5 minutes to throw ingrediengs together and bake.
  • Egg bake omelet with veggies. Super easy to throw together and bake the next morning!
  • Overnight Chia Pudding. Loaded with healthy fats and protein. I like to bake a big batch once a week that lasts for 3-4 breakfasts (or lunches or snacks)!
  • Baked Oatmeal to go. Looking for ways to boost up your oatmeal? Make these baked oatmeal loaded muffins. I like to make 2 dozen at once. They also freeze very well!
